Method
- In a bowl, mix together the rice flour, water and sugar. Cover the bowl with plastic wrap. Poke a few holes in the plastic wrap to allow the mixture to vent.
- Microwave the mixture of rice flour, water, and sugar for 2 minutes. Let it cool before rolling it with a rolling pin.
- Cut the dough and place it into the ice cube tray. Knuckling it into the pockets helps not tear the dough.
- Scoop each flavor of ice cream into the pockets and cover with another sheet of rice dough. Freeze for 1 hour.
- Flip the ice cube tray and cut the mochi cubes using a pizza cutter. Enjoy!
